I love looking for ways to elevate simple dishes to a more sophisticated palate. Even though these quesadillas are not gourmet, they sure pack an amazing taste. I made the pesto vegan and with walnuts. I find that many people don’t like the pine nut taste and some are allergic to it. If you don’t wish to add the pesto, no worries! You can add some vegan cheese in its place. Pair this with some dill dipping sauce and it will add another level of flavors.

Zucchini Quesadillas with Vegan Walnut Pesto

These quesadillas are not only flavorful but healthy for you. This new way will dress up your food with a nice zip with each bite.

Ingredients
  

Walnut Pesto

  • 2 cups fresh basil pack the cup
  • 2 cloves garlic
  • 1 cup fresh parsley pack the cup
  • 1/2 cup walnuts
  • 2/3 cup olive oil
  • salt to taste
  • pepper to taste (optional)

Zucchini Quesadillas

  • 4 8 inch tortillas
  • 1 medium zucchini Sliced lengthwise
  • 1 medium summer squash Sliced lengthwise
  • 1/3 cup olive oil
  • salt to taste (optional)

Instructions
 

  • Combine Pesto ingredients in processor and blend, set aside
  • Coat veggies in oil and salt and pepper. Place in pan until soft.
  • Spread pesto on tortillas and layer with vegetables, top with feta cheese
