The Vegan Pioneer Project

Just a Mama and her girls on a mission to re-make Ree Drummond's recipes vegan and gluten-free.

We have always been a family that loves to cook. From the moment the girls were able to hold a fork, I had them sitting on the counter shredding zucchini and stirring mixes. Through the years we found out that our dietary restrictions were more serious than we thought and had to switch our cooking to gluten-free, vegan, and low fodmap (for me).  This only made us girls take up the challenge and re-create food so we were able to eat it. When watching the Food Network one morning, the girls fell in love with The Pioneer Woman, Ree Drumond. They loved that she lived on a ranch and cooked amazing food, even though we couldn’t eat most of it.

When they finally had the chance to meet her at her book signing event, they couldn’t stop watching her shows. Then the grand idea was thought up from one of the littles, “Let’s re-create The Pioneer Woman’s recipes so we can eat them!” Oh, man. This would be a challenge and I respect her cooking so much. I decided that we would give it a try. So to those who follow this blog, know that these recipes will not be exactly the same ingredients and often times have other ingredients added, to help season a vegan dish to its best potential. It is our promise, that we will do our hardest to make the best-tasting gluten-free, vegan, and some low-fodmap versions of The Pioneer Woman’s recipes.

Let’s Eat!

Meet The Cooks

Jennifer Colburn

Jennifer is a passionate vegan cook with a certification in Holistic Nutrition and Coaching. She loves food. It doesn’t matter if it is vegan or not, there is beauty and art in a well-crafted dish. Her love for cooking started when she was a teen and has never stopped. When Jennifer became prego with her littles, she chose to go vegan and two years later, went gluten-free, as her littles required it. Today, she is low fodmap due to her body’s decision to reject some of the best food out there. However, with all of these restrictions, Jennifer has accepted the challenge to be an amazing vegan and gluten-free cook.

Juliana Colburn

Juliana is detailed and structured. You can often find her following recipes or keeping the family on track with the right ingredients at the right time. She thinks cooking is like a puzzle and quite fun. Her favorite part is eating the food. She keeps them talking and smiling with her day to day wisdom.

Olivia Colburn

Olivia is creative and entertaining. She likes spending time in the kitchen with her family and thinks cooking is fun. After a dish is made, Olivia likes to work on the food styling for the photos. She finds being in the kitchen is peaceful and a place she can find her creativity.

Mike Colburn- Food Judge

When all of the cooking is done, there needs to be someone who is willing to try something new and someone who eats all kinds of food. That would be Mike. He loves healthy food but enjoys the occasional chicken sandwich or fettuccine Alfredo. He is very particular about vegan and gluten-free food tasting great, as his palate is quite diverse. He is honest and the most valuable critic in our kitchen. If it passes his test, then it can be passed on to others. He is our food judge.
