There is so much information about whether gluten free is good for you or not. Most of my family is gluten free, with the exception of my husband. It is our experience that eating gluten free has made our tummies feel better and also has taken my inflammation down. Unfortunately food is not made the way our grandmothers and great-grandparents have enjoyed it. We have added sugar, chemicals and preservatives that are causing our bodies to react in unpleasant ways. My girls are gluten free because they have Celiac disease and I have just chosen to cut it out as an experiment to see if it helped with my inflammation. It did, so for our family, eating gluten free and vegan is best for us. Not everyone feels this way and that is perfectly fine. Just find what works for you and your family and live a healthy life. Saturday nights are usually our family fun night. We like to watch a movie together while snuggled on the couch. My kids love air-popped popcorn with homemade pizza. I needed a recipe for gluten free and vegan pizza crust, since store bought cost around $4.00 for two little crusts that usually aren’t vegan. On top of that, it doesn’t feed my whole family. This recipe I found was from Primarily Inspired, but altered it to fit our dietary needs. The pizza crust was really easy to make and tastes really good. The Italian seasoning gives it a nice flavor too. You can also split the dough into four pieces, roll them out and bake them for small crust or flat bread. Perfect for an afternoon lunch.

Vegan Pizza Crust

Servings 2 medium crusts

Ingredients
  

  • 2 cups tapioca flour
  • 1/2 tsp. ground pink himalayan salt
  • 2/3 cup olive oil or oil of your choice
  • 2/3 cup water
  • 2 Tbs. apple cider vinegar
  • 2 flax eggs 2 Tbs. Flax meal + 6 Tbs. Water = let sit for 5-10 min = 2 flax egg
  • 2/3 cup coconut flour
  • 2 tsp. Italian Seasoning

Instructions
 

  • Preheat oven to 450 degrees.
  • In medium bowl mix tapioca, salt, Italian seasoning and coconut flour, set aside.
  • In a small saucepan, place water, apple cider vinegar, and oil. Bring to a boil and then remove from the heat.
  • Add liquid to the dry flour mix. Stir. Add flax eggs. The dough will soak up the liquid quick, when cool to touch, knead the dough with your hands to make sure all flour and flax egg is incorporated well.
  • Split dough into two balls. Place one dough ball in between two pieces of parchment paper to avoid the dough from sticking to rolling pin.
  • Once both pieces are rolled out, place on baking sheet or pizza stone and bake for 7 minutes. Flip and bake for another 5 minutes.
  • Remove from oven and top with your favorite toppings. Bake for another 8-10 minutes.
